Your demo is off to a good start.
Some feedback...
>Difficulty Curve
I think having Stalfos 2, many Zoras (in the water areas) and Darknuts in the beginning area is a bit unsettling. I understand that you're going for "difficult" but Link only has 3 hearts at this time so the difficulty borders on trollish right off the bat. The current choice of monsters might put some people off. Just my two cents on that.
>Ladder bugs
I made the mistake of completing the block puzzle and going down the staircase before getting Roc's Feather. The ladders didn't work when I attempted to get back. F6ing kept me in that room. Was almost permastuck (but I found a way around it).
>Continue Bugs
F6ing in rooms with staircases twice allowed me to proceed through the doors without killing the enemies.
>Graphics
I think the tileset is appropriate. No complaints there.
Looking forward to seeing this progress, can't wait to see what the plot is.
