Recently, this project has been giving me some anxiety and stress, as I am not sure if I can do one complicated quest, much less two. And to be honest, the other project conflicting with this one is the one I am more interested in. I really have no idea what to do with this project anymore. What do you guys think?

If you do not want to work on it, put it on indefinite hiatus until you are absolutely sure. You might have an urge to pick up or remake it again in the future.
Work on another main project for the time being. Do not inactivate the project.

I would say you're just bored, take a break, do something else, and when you get the urge to do some zelda classic, you'd probably get some ideas.
It's easier said than done, but that's how it worked for me. Doesn't mean it will for you.
