Final Fantasy 7: Since I have no life, I maxed everyone out, got every Item, and I also completely maxed out All my materia, so that each person had every mastered Master Materia, and a few ones I decided to trow on there for fun. and yes, that means all 200+ slots for Materia Storage in the menu were filled up too ^_^
Final Fantasy 8: Got everything and Maxed everyone and all GF's out
Final Fantasy 10: Completed a Max Sphere grid run, having +255 for every stat, 999 MP, and 67,300 or some odd HP.
Super Metroid: Completed a 100% speed run on my SNES (NO emulator) in 1:12. I even taped it
Ocarina of Time: Completed Fox's minimalist run... cant get any tunics, heart pieces, heart containers, ammo upgrades, special weapons that you do not absoluetly need (IE Ice arrow) No biggorons sword etc. (I think that can still be found on this site)
Thats all I can think of right now.

Beaten the game in 8:35 (star world )
Finding every level, every coin, every switch, and maxing out the lives and point total. God that took a while... Especially that last one.

got every item, and did everything on Kingdom Hearts. Including beating Sephiroth and the Ice Titan. (Except beat Kurt Zisa. But I had already done that and my game got reset. I haven't got around to doing it again. Even though it would be a walk in the park at lv. 100.)
Same in Majora's Mask. (Every subquest, bottle, and Heart Piece.)

Obtaining the Biggoron Sword in Ocarina of Time WITHOUT Epona.
...Think about it. That requires doing the timed trading quest without a horse, i.e. running from Lake Hylia to the top of Death Mountain in around two minutes real time.
Give it a try and see how hard it is. I finished it with one second to spare.
This is actually fairly easy if you "cheat". No, you can't warp via Ocarina songs (whatever you have automatically spoils). Here's what you do: Hold down Z (or L if you're playing the GCN version) and "side step" across Hyrule. This cuts time down by nearly one half. Actually, you can cross Hyrule field in about 45 seconds this way
I got a picture of my three heart OoT run, but it's a bit sad considering I died 28 times, and still used fairies with the life upgrade. I'll have them either tomorrow, or later tonight. I only had one bottle though, and that's the one you get from Lake Hylia.
EDIT:
This run has been Anthus Approved!
High Resolution; no-shop proof.

My best video game moment was beating the first boss of the first video game I played on N64. It was the only game with its title that I'd played up to that point, so to be able to say I beat it, was something for me.
It was Gohma. In the Deku Tree.
Walked around that stupid room for like, 3 hours trying to figure out what to do. Although, now, when I go back to play it, the stupid thing is dead before it hits the ground. :-P

FFX - Khimari Only Run
-Not that hard, but it was fun when I did it.
Metroid Prime - Story Items Only Run
-IE No extra Missle Tanks, Power Bomb Tanks, no Energy Tanks, Extra Super Beams (or w/e they're called, been a while since I played it)
Metroid Prime 2 - No Energy Tanks
-Not because I was planning to, I just couldn't find them x.x;
Ikaruga - Beat the game
-You play it and then tell me this isn't an accomplishment >_>
We Love Katamari - Beat Rose Level
-Another fun little treat. It's actually getting the cousins that's the hard part.
Chrono Trigger - All Endings(on Playstation)
-It's cheaper than doing it on SNES, since they give you hints on how to get other endings in the Endings section of the Extras menu.
FFV - All Jobs Mastered (GBA)
-Gets rather easy after mastering Oracle and Mime.
FFV - All Jobs Mastered (Playstation)
-AP Up didn't exist at the time, and I wish it did.
OoT - 3 Hearts Run
-Actually, 3.25 hearts. Picked up a piece of heart when I wasn't thinking.
And that's what I can remember from the top of my head.

(P = Phantom ; V = me (Vash) ; ` = floor ; - = wall)
^Like that
And I lived. Oh, and with no Phantom Sword. Yep. I take risks all the times with these idiots...
