What is a completely random, off the top of your head, quest that you would recommend someone to play? Preferably something sorta niche and not super extremely popular.

Gotta go with one of my favorites:
Origin by Darkflamewolf
I still haven't found any original LoZ remakes that match it. Check it out:)
EDIT:
Realized you were looking for something more niche. Origin is one of the most well known quests out there.
For an interesting experience I recommend:
Myst Island by AtrusW0nder
It's a fun one. I never finished it but it requires some grinding and if I recall you have to buy keys from the shops to complete the game.

Search for Elise, by Freedom. Very unique looking quest, and it has a midi version of gimme shelter, so that alone makes it better than 99.9% of quests released in the last 20 years.

had the original yeto quest and its sequel recommended to me by ether, absolutely recommend them for their own surprising experience of ZC if not for anything else

something niche: Oracle of Awesomeness; got overshadowed because it came out around the time of Isle of Rebirth, and it's a bit jank, but I enjoyed myself a lot with it.
Link and Zelda: Panoply of Calatia might count; that one is one of the top rated quests in the database, but not everyone has played it.
