I've always wondered, how does it animate?
And does anyone know any good sprites for DOR Link?

Very easy, actually.
In the tiles page, place all of the frames of animation to the right of the first frame of animation of the item, so that if you position the cursor on the first frame all the way at the left, and held in the {Right} button, you can watch a quick preview animation of it animating. If it looks right, (If fast...) you know you've laid them out correctly.
Now go to Quest -> Graphics -> Items (If pre-2.5) or Quest -> Items if you're after 2.10 and find the item, and you can set its Frames property there, as well as its speed.

And say there is 10 tiles for the animation, you would pick 10 for frames?

How high can the speed go? I tried it and the higher the speed, the slower it went. Strange.

0 is the fastest speed. 1 is the next slower speed, 2 is the speed slower than that, etc. The higher the number, the slower it goes.

That's exactly how it works, if you put it at 1 it goes really really fast, and around 7-15 is usually what most sprites are animated at.
Ah, ST beat me to it, but yeah for normal animation items 7-15 is what I've always seen them in. It's just trial and error until you get them how you want them.
