You do realize that timing a shield bash correctly will stun melee enemies, right? I was doing that against Demise but a couple miss timings resulted in them being broken pretty fast (Successful counter with a shield bash results in no damage being dealt to your shield). After shield bashing you can usually get one or 2 hits in if your fast enough, once I ran out of shields I had to think of a new way to kill him and ended up parrying his attacks which very often left him open to one or 2 attacks.
The problem with this is you have to be very quick to parry immediately after getting your hits in or else you WILL get hurt. I also like how he looked pretty much how Tekken final bosses look xD
The Boss Rush earns you 2,500 rupees for fully completing it during first playthough. Not sure if it changes during Hero Mode other then adding Demise to the roster as well as presumably Girahims final fight.
Well, when I went against him the first time, I was hesitant to use my shield too because I only had the Goddess Shield with me and that breaks after like two hits if you time it wrong. And like I said before, I always had issues with the electric sword too so stunning him with the shield wouldn't really help there. Of course now, he's sort of pathetic..
The final Ghirahim fight is there for me on the regular mode and it definitely gives me 3000 rupees for completing all of them. Demise is only in the Hero Mode version (and actually easier. The Horde Battle is insanely hard though). I hear you get 9900 rupees for completing it on Hero Mode as well, but I've never done it.

Funny thing was, I tried doing a Skyward Strike 2 or 3 times, thinking I'd get a lightning sword, but Link never held up the sword, so I figured only Demise could do that. So I beat him without using the lightning at all. Just get close, wait for him to attack, get a quick swipe in and backflip out of the way of his counter attack.
I got it early on so I knew it'd work, but yeah, the sensor really sucks for that battle for some reason. Demise also goes nuts the second Link raises his sword anyhow..

As far as the shield, no, it's not useless. Actually, I'm fairly certain that if you let Ghirahim take your sword during the first two battles with him, there's no way to get it back unless you shield bash it out of his hands. Don't quote me on that, though; I've only let it happen once to see what happens, and I shield bashed as soon as possible, so I don't know if that's the only way to get it back or not. Seems like it, but then again, with a breakable shield, they probably wouldn't want to shanghai the player like that.
Ghirahim will actually throw the sword at you, so if you don't have a shield, you can dodge it and then pick it up off the ground. I was messing around and that happened once.
