I did contemplate buying both versions but I'm just going to stick to the Switch version for now. I might pick up the Wii U version at a future date just to have, maybe try it out and see how it compares, but otherwise Switch version for me.

Are you just getting both because you want to collect everything Zelda, or do you really want to see what the differences are? Or perhaps so your Wii U doesn't get lonely?

If they do have Switches in stock in the store though, I might ball hard and get both versions, and a Switch.

I'm getting the Wii U version, because to be honest, I'm just not really interested in the Switch. And I have to get SOME use out of the Wii U.
Likewise for me. With the new Zelda, I'll have 6 Wii U physical games and 2 downloaded ones. Since my minimum requirements for buying a system is 5 games that I've interested in getting; it more than meets the quota.
There are things I'd like to get on the Switch... eventually. When it's dropped in price or after time has passed for more stuff to be released and I'm not up to my ears in debt.

Why is it only Nintendo gets away with this sort of mindset? It's the old system. Sony price drops their old console when the new one comes out. So does Microsoft. They've been doing this for multiple console cycles now.

To be fair, Microsoft and Sony don't usually have big system sellers that they really want you to upgrade up to the new system for. Sure, there are plenty of cross-generational third-party games, but nothing that's ever been promoted, marketed, and hyped for nearly as much as Zelda, which is one of Nintendo's biggest first-party titles.
Plus, Wii U production has already been halted; when was the last time either of its competitors stopped producing a console before the next one even released? However, in that instance, I can see arguments both for and against price drops. An example of for: Might as well attempt to move the last units and get them all off shelves for a cheaper price, instead of letting them end up in the dump. An example of against: They might be seen as a bit more valuable now, for those who want to get ahold of it for Wii U games or some sort of collection purposes, so might as well get the most out of the remaining units as they can.
And also not hinder Switch/Zelda sales as much as they can.

As far as I know the content is exactly the same on Wii U and Switch, we're not getting a strange and completely pointless world reversal like we did with Twilight Princess either. The only difference is that the Switch version will have better graphical fidelity. So from this perspective it makes sense that you pay the same regardless of platform.

Nintendo products in general never go down in price. They go from overpriced hardware and software to "rare collectables" without any in between. Nintendo products thus stay overpriced, and Nintendo sees this as evidence to their belief "they just offer better products". As for why Nintendo gets away with this is because more often than not, Nintendo fans don't really negotiate any other options. Look at the number of people in this forums alone for example, they are buying the Switch on release before the console is even proven. The console is purchased purely out of favouritism and faith alone.
Under these conditions, how could you believe Nintendo will ever feel the need to negotiate prices? People who buy Nintendo will buy Nintendo at any price they set because "Nintendo".
