Yes, personality is more important. I'll get that out of the way up front. Now, when you say that you'd "go out with Fluttershy in a heartbeat," do you mean the actual pony, or a human persona of her. For the sake of the question, let's assume there are anthropomorphic ponies in the real world. Now, would you still go out with her if she was a pony? Keep in mind that this would most likely be frowned upon by society, and humans and ponies are not quite, erm, "compatible."
You can be attracted to a personality without having to give it human form. Many people who want to literally humanize the ponies are trying to fill the gap of physical attraction.
I'm talking the actual pony, because that's Fluttershy. If Fluttershy were originally a human, I'd go out with human Fluttershy. But it just ain't so. And while I respect that some people need to re-imagine the characters as humans, that's not for me. I respect her for who she is (AND I'M WELL AWARE I'M TALKING ABOUT A FICTIONAL CHARACTER).
And I'd like to point out two things:
1. I already watch and obsess over a show for little girls, so it doesn't particularly matter to me anymore if society frowns upon my actions.
2. If I ended up dating a colorful talking miniature equine, I think society would have some questions for me that would take priority over why I'm dating a horse.
That said, I'm really not capable of feeling physical attraction any more. That part of my personality, if it was ever there, died a long time ago. So really it's not a furry-ism concept for me in any way shape or form. When I ask myself if I'd like to have a conversation with Fluttershy over a nice meal or during a day in the park or something, the answer is yes, without hesitation. And that, I believe, is what justifies calling it attraction. She's kind and knowledgeable, and a good listener. If I were to spend the rest of my life with someone (or somepony) that would be the exact personality I'd try to find.
