@Nathaniel:I also write like that, but still do the rewrite just in case I forgot some point of mine or to catch errors and stuff. It's a great way to write, but only if you have time to follow that procedure.

I totally agree, Nathaniel- this is how I write research papers. However, on the SAT/ACT, I've found that it's not very practical, mainly because of the absurdly short 30 minute time frame given. If you can make it work for you, then feel free to prove me wrong, but I've only been able to barely get my essays done at all before I had to put my pencil down.
Sometimes I easily forget about their extreme time constraints. It makes it very difficult to write a good essay, even for the best of us. Plus it forces the writer's cramp much more easily. When I took the SATs, I don't remember there being an essay section. Just the vocabulary, analogies, fill in the blanks, and reading comprehension, I believe. I don't have much of an issue with multiple guess being on strict time limits, but essays should be allowed at least a generous time limit if any limit at all. Still, even with 30 minutes I think it can help to jot a few notes down before you start structuring your essay. It also takes significantly longer for teachers to correct essays than it does almost any other form of testing, as grading is based on scoring rubrics and the corrector's own judgment. Spelling, grammer, and sentence structure are easy to judge (with enough experience, naturally), but grading the actual content can be a harder.

Know in advance how long your essay should be (how many pages can you write in 30 minutes? How many words to they want?) and write accordingly. If you are aiming for one page you'll want different length sections than if you're aiming for four.
