Now, I'm going to assume we'll be getting to play the GDC-demo, but just in case we're allowed to explore more of the game, is there anything in specific any of you want me to capture?

At first, I was going to say "The Temple of Time," but I have a pretty good idea of what that'll look like. (See: Twilight Princess.)
So instead: how about the towns? Those were pretty limited on the N64. I'll be happy to see what they've done with them.
Also, how about Kokiri Forest? We haven't seen much of that yet, and it'd be nice to see whether they made a forest with, you know, more TREES.

If you only get to choose between those three area types, I suggest focusing on dungeons.

Any dungeon OTHER than the Great Deku Tree. Heck, the Deku Tree doesn't even come to mind, usually, when I say the word "dungeon"...
Excellent point. We haven't seen either of them yet. Have we even seen Princess Zelda, for that matter? I would be in favor of seeing more major characters, if they pop up.

Well, we haven't seen Sheik in video, but we have seen him (...her?) in a picture.

It's doubtful he's referencing the 3D capabilities of the platform or the new control scheme and inventory improvements, since those are both touched on in the interview. It could be the Master Quest, but it seems like the reference of new material is to the original game. I doubt they're adding, say, an entire dungeon, though. Any ideas as to what he could mean?
