Then yeah, what's more significant is that you're skipping Zelda's Lullaby; it's not quite the same as full-on sequence breaking.
Even if you can't get it before Zelda's Lullaby in that manner, you definitely can immediately after learning Zelda's Lullaby. In fact, that's always the first thing I do after learning the lullaby: Go straight to the Ranch and learn Epona's Song.

Inside the Deku Tree: Starting off on a happy note, this dungeon sucks. It's boring, short, and way too easy even for a first dungeon. Seriously, if the any dungeon can be beaten in under 15 minutes, there is something seriously wrong with it. Also, the slingshot. Oh god, the slingshot. Horrible item, and has about five uses in the game. After you get the boomerang a little bit latter, I see no reason to ever use the slingshot again. So yeah, get a new item here. And then scrap the whole dungeon and make a new one.
Dodongo's Cavern: I guess I don't have any problems with this one. It's not the greatest, and it feels a little slow-paced and boring, but I'm okay with it. At least it didn't have the slingshot.
Inside Jabu-Jabu's Belly: Not that great, but not horrible. It looked rather bad, graphically, in my opinion. The entire place was varying shades of pink. It lacked any real, good puzzles. The strange tentacle things were about all that there was, and there was only three of them. I see it as a bad sign that there is another Jabu-Jabu dungeon that was better than this one. Seriously, feel bad when there are two dungeons of the same name, and you have the worse one. Huh, I just realized. I must have a thing against dungeons inside living creatures.
Light Temple: Hahahahahahahaha.
Forest Temple: Perfect dungeon. Don't change a single thing, Nintendo.
Fire Temple: Meh. Don't really care. Never really loved it, but can't think of anything wrong with it. Maybe add a shortcut that you can open if you fall all the way back down from the top floor. And re-addding the original music would be nice.
Ice Cavern: Ice Temple, please.
Water Temple: Make it harder. I'm dead serious, make all the little kiddies cry about it. An even longer and harder (:awesome) Water Temple would make this game perfect. Even if the just added 7 Deku Trees as the other dungeons.
Karkariko Well: Actually quite liked this. Was a nice segue into the Shadow Temple.
Shadow Temple: Another great dungeon. Don't oats with it. You can add some more rooms to make it less short, but don't change what's already there.
Spirit Temple: One of the better dungeons, but not my favorite. I would have actually liked a bit more of a desert theme, and maybe add some more enemies (it might just be me, but I thought it seemed rather barren.) Mirror shield puzzles were great, however. Preferably, add more.
So that's what I'd do to make the game better. Probably upset some people, but I couldn't care less.

I don't agree that the Deku Tree needs a new item- I think the slingshot suits it fine, and hey, there are indeed combat uses for it too. I like taking out those pesky fire bats in the main room on the 2nd floor in Dodongo's Cavern with it. The boomerang only goes so far, is hard to aim with, and at most, stuns most enemies, while the slingshot deals damage.

Specifically, I think they should add a Light Temple and Ice Temple for sure, and possibly also an Earth Temple. But Dodongo's Cavern is pretty earthy, despite the lava, so at least they had a little bit of the earth theme. The Ice Cavern really needs to be expanded, though, and the Light Temple could be made to reference Twilight Princess.
As for Inside the Deku Tree: that was a player introduction not just to OoT, but full 3D action/adventure gaming in general. Nintendo was being careful and taking baby steps when they made it. Yes, perhaps they should step it up a notch since they can't expect the players to amuse themselves by staring at the ceiling and backflipping and stuff.
They have to recode all the old ones, so hey, why not?...
And yeah, I'd love a Cave of Trials/Ordeals. And I can totally see them adding one. Playing through one is practically like a combat playtesting arena, anyway. As long as the enemies are well-coded, there's not much else they need to create.

I don't think they'd change only a few dungeons, if any. I would like a Light Temple and Wind Temple though. Even if they were optional, I'd be nice to have something new like that.

I agree. If they make it multi-target like in TP, it'll have its uses, whether or not Young Link can use the hookshot.
Also, part of the reason it became so unused is because it was found in the last major Young Link dungeon. The hookshot is supposed to be the Adult Link equivalent, but the two items aren't really as similar as the slingshot/bow and arrow are. The difference is accentuated in WW and TP.
I don't mind the existence of the slingshot. But I don't see any reason for items to become unusable as Adult Link. What, are his hands too big or something?... Doesn't seem to bother him in TP, where the slingshot and the bow are coexisting items...
Did this have anything to do with the fact that the camera went all wonky when you used it, it was very hard to aim, and it flew really slowly compared to the other long-range items?
A fast-moving, easy-to-aim boomerang that homes in on enemies like in WW and TP could be extremely useful.
