Sea urchin seems to be as close to a correct answer as there is, but they look more or less like them depending on the game. The OoS version is fittingly spiky, but the BS version clearly has tentacles like a sea anemone.

An anemone also makes sense too. I mean, Barinade might be a distant relative lol.

In LoZ 1, it always looked like a giant amoeba to me.
...shrinking by sound for any reason (maybe "Head 'n Shoulders" would work, too)

They are big sea urchins.

 

In spite of their big bodies, they shrivel up when attacked.

 

But watch out! They come on pretty strong.

I have an idea for an enemy thats a reverse digdogger;

 

A dogdigger.

 

It starts off as the babies which cant be hurt, and upon whistling, they form together into an adult that can be hurt.

 

This is temporary, and they need to be beaten fast or they turn back into babies.

 

This has some coronavirus charm to it, too, because its like a disease, and if you dont kill the main disease it turns back into baby diseases again.
