Enemies are based on luck?

Here is what happens when I fight goriyas:

 

1. I take it head on and it throws the boomerang when I strike

2. I hit it on the side and it turns around and bumps into me

 

Is the best strategy here really just praying that neither of these things happen?

If you take them head on then try moving half a tile left or right so that its boomerang can't hit you.  If you absolutely cannot do this then you should strike only when the goriya is moving between tiles since it can't fire its boomerang then.
 
If you are attacking from the side then you must anticipate the possiblity of it turning and bumping into you.  If you're quick about it you can leap out of the way before this happens.

What James said. These guys are my most hated enemy out of all the enemies form Z1, though it's not the worst out of all the ZC enemies in terms of RNG (lookin' at you, Fire Gleeoks, Fire Wizzrobes and Patra 3's)

Goryias are very dangerous to tackle head on when you have limited health because they don't halt before firing their Boomerang. Always try to hit them from the sides (but not the back, because that knocks them away). It gives them the chance to move to attack you, but this is where you should be careful to either only attack while they are throwing or make swift passes to chip at them.

3. You walk near and it turns and immediately hits you with boomerang. Full heart gone, out of 3. Imagine if Blue Goriyas have weapon damage quadrupled.

Ranged weapons help, too. Tactical combat is usually the best option.

let them do the first move, they cannot move when are waiting that the boomerang return
