The only way to do that is with scripts. Which I personally don't recommend jumping right into. I would go with something simple to just figure out what you can do with the editor.
However, if you want big enemies, check the Database at the top of the page for scripts. There's a big enemy script and there's also a newbie boss script that can accomplish it.
But it will almost certainly be difficult to set up while you're new to everything.

You *could* also wait for stable 2.54, which has size adjustment in the enemy editor, but who knows how long that'll be, considering it's still in alpha. And I don't recommend building in alphas/betas unless you're okay with virtually nobody playing your quest
