I agree with anikom. If you look into some of the tutorials, you may find the answers to a lot of your questions on your own. The Zelda Classic Wiki is a great source of knowledge, too. Of course, if you truly are stuck, there's no problem asking here. (Although ZQuest Editor Help might be the more appropriate place).
As for your specific question ... What is probably happening is that the "fire" type guy has been overwritten or edited. There's a quest rule that automatically places fires to the right and left of guys in item rooms, and if the graphic for the fires was altered somehow, it'd look weird. (Here's a list of guys from the wiki.)
There's two ways you could fix it. Either edit the hard-coded tiles for the "fire" guy, (as you can see from the link, it uses tile 65, cset 8, and flip style animation), or check the quest rule "No fires in Guy Rooms". Doing the first option would make the fires look correct, whereas the second option would remove the fires completely.
And about getting stuck ... You need to block out the borders of your screens so that Link cannot walk into solid combos on other screens. If there's a solid tree on the border of one screen, you need solid combos on the adjacent screen so that Link can't scroll through there and get stuck.
